DH out of town so tonight might just be caprese. But to assist, last week I did a dinner of Greek chicken (onion and garlic sautéed, added chicken breasts and cooked, topped with diced tomatoes, oregano and crushed red pepper and feta and let it all simmer til warmed through. Served with lemon potatoes done in the oven- potatoes cut into wedges, tossed with olive oil, oregano, salt and pepper, with chicken broth poured around. Baked til they absorbed the broth and were crispy, then drenched in lemon juice and roasted til that was absorbed. This was a delicious dinner!
