I'm making spanokopita, which is easy but slightly time consuming. It requires phyllo dough (freezer section), spinach (also freezer section), onion, dill (I'm using dried), egg and feta.
Saute chopped onion in olive oil and/or butter until translucent, then add thawed frozen spinach, dill, salt and pepper for taste and cook until most of the liquid from the spinach is gone. Transfer to a mixing bowl and allow to cool slightly (I stick the mixing bowl in the freezer). While the spinach is cooling, I beat 2-3 eggs with about 1.5-2c feta. Add the egg/cheese mix to the spinach and mix well.
Brush the phyllo sheets with melted butter/olive oil mixture and layer 5-6 sheets on top of each other in a buttered casserole dish. Dump the spinach/cheese mix into the dish and layer another 5-6 sheets of buttered phyllo on top.
Bake for 30-45 minutes in 350 degree oven. It's done when the top is golden brown. Keeps well and may actually be better cold than hot
