When are you going? Now (and through the spring) the water will be cold - just be prepared for that if you're planning swimming/surfing. La Jolla is a good choice to stay in, for access to beach areas (La Jolla Shores, La Jolla Cove, Windandsea Beach), and you can get to other beaches, like Mission Bay or Torrey Pines State Reserve. There are some good food options in La Jolla - lunch at George's Ocean Terrace, which has a great view; dinner at Whisknladle. If you like seafood, grab lunch at El Pescador Fish Market and have a picnic at La Jolla Cove.
Gaslamp is pretty touristy. For dinner I'd recommend the Little Italy area - Kettner Exchange, PrepKitchen (same company as Whisknladle), Juniper & Ivy are all good restaurant choices.
And you didn't mention transportation, but you will need a car. The La Jolla beaches aren't really within walking distance of each other, and there aren't great public transport options for getting to downtown/Little Italy/Torrey Pines, etc.

I haven't been there in a long time, but I'd vote Hillcrest over Gas Lamp, easy. Hillcrest is (was) a funky dunky art/antique kind of area with some good restaurants. We had a really great Italian meal at a place called Arrivederci, on (I think) 4th Ave.

Gaslamp poster here. Where would you go PP? I lived there years ago and Gaslamp was a fun place back then.

Mission Bay has water sports and a younger vibe. La Jolla shores also has water sports and good waves plus walkable shops. Hotel Del Coronado has a fancy brunch that is fun to dress up and attend. The adjacent beach has golden sparkles in the sand but waves are meh.

I'd stay in La Jolla and hit the La Jolla shores beach for kayaking or take a surf lesson. I'd pick up lunch from a restaurant and eat it on the beach. Maybe get a massage in the evening somewhere and dinner in Gaslamp.

Stop over in San Diego. Will have two nights and one day to myself. No kids. Just me! I love the beach. What should I do? Where should I stay?
