Seafood.
Roasted salmon. Halibut wrapped in parchment. Seared scallops. Clam chowder. Beer batter cod.

I made a really amazing posole the other night. DH claimed that it was like a restaurant. I also made him fish tacos later in the week, using mahi mahi (from Costco freezer section). Made a sauce that was Greek yogurt, hot sauce, lime juice, cumin and some chipotle chili powder and he basically thought it was a gift from god. I didn't eat the tacos but the soup was great.

Lasagna
Roast chicken with gravy, potatoes
Anything braised

Of course I never have time for those, especially on weeknights, so I ACTUALLY cook things like turkey cutlets or hamburgers with a roasted vegetable.

A nice salad seems to start the meal off right. I like arugula with beets and chevre, or watercress with grapefruit and a honey-vinegar dressing.

Italian salad with tuna and white cannellini beans
Meatloaf
Chicken pot pie
Potato and Leek soup
Cauliflower soup
