For Spanish there are a couple summer camps

Waterfront Academy in SW
WIS in NW
SWS hosted a two week summer camp in Spanish last summer in NE
Also most immersion schools seem to offer a couple of weeks of camp over the summer

I also download movies that are dubbed in Spanish. Right now my kids like Winnie the Pooh.

All of the above! Getting the target language from as many different sources as possible as often as possible even if you speak very little of the language learn enough to read to your child. Music and videos. Babysitters or summer au pair. Camps. Library programs. Good luck!

If your child is enrolled in a language immersion school, how do you keep the languages fresh in their mind over the summer? Camps/summer school? Books, videos, music? I'm interested in a variety of ideas (my son is currently in K). Thanks in advance.
