I think the point of the doll transformation was to just make them look more realistic and take away all the features that have been unnecessarily exaggerated to the point of looking non-human. But the whole point of Barbies is to act out adult scenarios, like getting married, or going to work. It's a way for kids to try on adult roles that they're curious about Why would you want a "child like" Barbie doll. If I want a child like doll, I'll get a American Girl (or a knock off, because I'm cheap) so my kid can pretend to be the mom.
