"Baked ziti": cook pasta to al dente (whatever kind, doesn't have to be ziti), chop up veggies (green peppers, zucchini, mushrooms, onion, garlic, whatever you like) and saute in olive oil, with Italian spices. Mix pasta, veggies, a can of diced tomatoes and a block of mozzarella cut up into cubes in a mixing bowl, pour in a casserole dish (best to spray with cooking spray to prevent sticking/burning). Sprinkle parmesan on top and bake until the cheese is melted.

This is technically a recipe for enchiladas, but easily modified to be a casserole:

The real value in that recipe is the sauce. You can edit pretty much anything else to your liking. Personally I use full fat cheese and sour cream, flour tortillas, and add corn and red peppers to the filling. My carnivore family loves it.
