Modified cornstarch will never contain gluten. In fact if you see the ingredient "starch" it has to be made from corn.

Some soy cheeses still have milk protein in them so check the labels if you really want vegan. Most of the vegan cheeses taste awful but I do recommend the Tofutti brand of vegan cheese. The taste and texture is better than most but it's quite high in fat. You can't have everything, ya know.
