What about if you baked eggs in a muffin tin? We just served them at a dinner party and all the kids love them. You can stuff with veggies, meat, cheese...or nothing.

OP, how about breakfast sandwiches? Depending on what your kids like, you could choose from ham, sausage, bacon, egg, cheese, bread, english muffin, etc.

You could assemble them the night before, wrap them in foil, then just put them in the oven in the morning to heat up.

You could cook sausage links the day before and just reheat in the microwave. Fast and no clean up.

You can also serve ham and cheese slices from the deli counter.

Pinterest has a ton of egg muffin recipes. Just choose the ones that are most visually appealing to your children.

It's Christmas, and coffee cake is your tradition. Years from now they'll treasure their memories of Mom's coffee cake.
Fry up some sausages to go with. It's just one thing, it won't be that much trouble.


For other mornings of the year, these muffin-tin mini-quiches are good. Just don't call them quiche. Call them egg & cheese muffins.

I would make the breakfast casserole (bread, sausage, egg and lots of cheese on top) and then withhold the coffee cake until they each had a few bites, but I am mean that way.

Is baked french toast considered a casserole? You could also do overnight oatmeal-rolled oats, yogurt, fruit, honey if your yogurt is plain, milk, in individual containers in the fridge overnight. Would they eat hard boiled eggs?

I would really like to make breakfast in advance of Christmas morning. I always do a coffee cake, but my kids really need protein to balance out the sugar. The problem is they refuse to try a breakfast casserole (such a bummer, because I love them). Any other ideas? If we get stuck, we can just scramble some eggs in the morning, but I'd really love not to have to worry about that and just focus on the kids.
