Wow. Teachers are really busy. Heck, I'm really busy - I don't usually get thank you notes out within a week.
If the teacher opened the gift in front of the kid, and thanked the kid right there, no thank you note (or separate thank you directly to you, the parent) is required. (read up on your Miss Manners for the guidance on this one)
If the teacher opened it outside of school/later (as several on this thread have said they would), a thank you at some point would be nice. But I wouldn't be put out if I didn't get one.
OP, you need to get over yourself. Oh, and get into the spirit of the season.
