Stuffing balls! Roll the stuffing into meatball-size balls, then cook in a hot oiled skillet, turning now and then, until they get a crust. They make good appetizers if you're having a get-together tonight, or serve them as sides like hush puppies.

I just made stock from the carcass and bones - will do a bean oe lentil soup in the slow cooker with bits of mear. Shepherds pie with the mashed potstoes. No good ideas for tuffing!

Turkey pot pie! Every year.

Except, sadly, this year. We didn't host and didn't cook--just took wine, cheese and store-bought pies. We're living in a leftover-free zone.

It's refreshing, yet weird and a little empty. But our waist lines will have it easier this year.

Turkey enchiladas. I make a homemade tomatillo green salsa recipe using some of my leftover turkey stock. I think my husband might like it even more than thanksgiving dinner. Well, not really, but close.

That turkey and spinach curry looks really good. I don't have all of those ingredients so I might have to improvise a bit but I think I can come close to the recipe.

That goi ga turkey sounds really good, too.

I'm planning a version of Vietnamese goi ga chicken salad with the turkey leftovers tomorrow. Shredded turkey, white cabbage, mint, thai bail, fried shallots, peanuts and a lime chilli dressing.

Once a year, my mom would always make "Hot Rolls" from a box mix and we would eat turkey sandwiches for the next few days. Love them. I love turkey tetrazzini (could be ham tetrazzini) and turkey enchiladas. I might try a turkey and rice casserole this year.

I find it hard to repurpose the veggies -- I just reheat them and eat as is.
