Very easy, and aside from peeling/coring/slicing the apples, it's not time-consuming. Needs more granulated sugar than called for (I use more like 1/2 cup, but the again I also use more lemon juice), but very forgiving recipe and always comes out great.

You need one of these! http://www.bedbathandbeyond.com/store/product/apple-peeler-with-vacuum-base/1011917925. Works for potatoes too. One of my favorite kitchen gadgets.

I use this one and typically double the topping: http://allrecipes.com/recipe/apple-crisp-ii/detail.aspx

My great grandmother's was half cup flour, half cup oats, 3/4 cup white sugar, and a stick of softened butter. Work topping together with your hands until it is crumbly. Water and cinnamon poured over the apples, cover with topping, and bake.

I've used Bittman's for apples (and berries, and a mix of both), and it's always excellent: http://markbittman.com/how-to-cook-everything-the-basics-fruit-crisp/

Do you like cranberries? This is kind of like an apple crisp with cranberries added. Our family LOVES this!

This one. It says cobbler, but it is a crisp:
