Crock pot pulled pork
Eggs, cooked any number of ways
Ground meat, cooked with seasonings of choice - can eat with fork or in a "taco" shell made of romaine heart leaves
Roast extra veggies on the weekend
Have salad greens and homemade dressing available
Make mayo on the weekend, then for a quick dinner make salmon or tuna salad (w/ canned fish) and serve in cucumber boats
Roast pecans with coconut oil and salt - for salad topping or snacking.
