Provided you cook the turkey properly, the only difference from roasting and using a bag is skin texture and appearance. Crispy skin is tasty and looks nice, but it is a very small part of an entire turkey. So it comes down to risking a dry turkey for the reward of crispy skin. Or almost guaranteeing a moist turkey but no crispy skin. Using a bag also works better when your stuffing the bird, again less chance of drying out the breast while ensuring the stuffing is done.
The meat itself will be the same from a bag as it will from a perfectly roasted turkey.
