Chicken and dumplings out of Joy of Cooking. Use frozen mirepoix mix and rotisserie chicken to make it easy.

You know what else I love when it's cold? Soup and grilled cheese. Buy the gourmet heat and eat soups and some nicer cheese and bread. Dinner in 5!!

Other nights will probably be spaghetti and garlic bread and a delicious looking recipe I saw on Mario Batali's IG feed for brined pork chops with peppers and capers.

So funny, your menu sounds almost exactly like mine, except my Ritz crackers are going on some fish. Just did a pork loin, and tomorrow I'm making a big pot of chili.

What is Western omelettes?

It's just a three egg omelette with scallions, green and red bell peppers, ham, and cheddar cheese. Easy and good.

I usually cook a couple of meals on Sunday and then a couple more on Wednesday. I know I'll have late nights at work probably 3 nights this week, so all DH has to do is heat what I made.
I did a big pot of chili and also a chicken/poppyseed/ritz cracker casserole. I'll also have him start the crock pot with a boneless pork loin in it one night. That will get us through the first half of the week anyway!!
Any inspiring menus to round out the rest of the week here?
