Onions and peppers freeze very well. I often buy the frozen bags of them at Trader Joes.

I roasted a mess of peppers and onions in the oven and froze them- Delicious and worked great in recipes.

They freeze fine, just don't crisp up as much when cooked from frozen. Still taste ok to me

I freeze chopped onions and peppers all the time. They thaw fine, and I can't tell the difference once they're cooked.

I have a feeling the onions wouldn't do well in the freezer, but I buy cut peppers from trader joe's all the time. I use them in stir fries. Not quite as crisp as fresh, but still good.

Do you have a basement? Onions should keep in a cool dry place for quite a while.

I have a few bags of onions and peppers from a co-op which need to be cooked or frozen. Should I cut them and freeze them (am thinking fajita style) raw or sauté and freeze them.
