I just made the Payard recipe for these the other day. They were just okay. Very sweet, very thin. They were good over ice cream but didn't really hit the spot. I was hoping for something fudgier and denser, like a "real" cookie. If you do make one that requires 3-4 egg whites, make Martha Stewart's no fail pudding with the yolks. Now THAT was good!

I'm guessing you have in mind something more like a flourless chocolate cake, but we make something very close to this recipe:

No flour, just oats. Has a distinct chewiness to it, which I crave but others may not love. Loaded with calories and fiber, so I like to bring these to friends who've just had babies...

I made these ones recently: http://www.the-baker-chick.com/2014/02/flourless-chocolate-cookies/. I thought they were ok - good, but not the best flourless chocolate cookie I've had by far. DH loved the, though. The upside to these was that they could not be easier or faster to make.
