I made this 2x last week, and it's really easy. You need a tube / bundt cake pan. I would also reduce the temp to 340 and check it at an hour and ten mins with a toothpick.
Apple Cake
Peel and slice thinly 5 or 6 firm apples. Coat with mixture of
3 tsp. cinnamon
5 tbsp. Sugar
Set aside
Into large bowl sift:
2 cups flour
2 cups sugar
3 tsp. baking powder
Add:
4 eggs
½ cup orange juice
1 cup oil
2 ½ tsp. vanilla
Beat until smooth, about 5 minutes.
Put half the batter into a greased bundt or tube pan, then half the apples, then the rest of the batter, then the rest of the apples. Bake at 350 degrees for 1 hour 20 minutes or until tests done. Let cool in pan. Sprinkle with confectioner’s sugar.

I'm not sure what you mean by "what are the best apple cake" - didn't the mix come with a recipe? I'd use that, as it'll be tailored for what is in the mix.
To convert a cake recipe to muffins, I just grease and flour the muffin tin, and fill each one about 2/3 full. I bake at the same temp the cake recipe calls for, but a lot less time. Start checking the muffins around 15 min, use a toothpick to check for doneness.
I don't alter the batter ingredients, unless I have several practice batches to experiment with. Some changes, like more or less baking powder, may help, but are just as likely to make it worse.
I would add a streusel topping, simply because it sounds fabulous on apple muffins!

Subject: apple cake help needed
i bought a mix of dry ingredients for apple mix from homestead farms this past weekend and i have 2 questions: what are the best apple cake and how would i convert the cake to muffins?
my in laws are in town, so it's crucial that i appear to be an expert baker (the bag from homestead will be buried in the trash). Only slightly kidding.
