Look up sofrito--lots of different versions from different countries. My college roommate's mom is from Puerto Rico and keeps a jar in the fridge. I'm not sure what she puts in it but her pork chops are awesome!

I just came back from a visit to relatives in another country and my aunt had made this simple, yet delicious homemade seasoning that she uses mainly for chicken and pork. She makes a batch and uses as needed. Her recipe was only salt, lots of garlic and cilantro green seeds mixed in the food processor. Her chicken really was delicious.

Anyway, once here I tried to replicate her recipe but could not find the little green seeds, only the regular cilantro and the seeds already dried (brown(. I still made a batch and it turned out pretty good.

I also made a batch of only salt and garlic, but I'm I feeling inspired to try different blends... Any ideas on nice combinations? And to what type of meat you would use it especifically!

I mean - what about sage, thyme, rosemary, mint, etc?
