I forgot to mention my family's favorite pressure cooker dish: carnitas using a modified version of this excellent recipe from Roberto SantibaƱez:

I cut the pork shoulder into 3 or 4 inch chunks leaving a fair amount of fat on, pressure cook it for 40 minutes, and pour off all but about a half cup of the liquid in the pot (I save the liquid to cook beans the next night). I break the pork into bit size pieces than put in a 450 oven (convection is great if you have it). I cook for about 15 minutes, stirring once or twice. During that time, the meat is oven frying in its own fat, and comes out super crispy on the outside and tender and juicy on the inside. I serve with a variety of vegetables and salsas for tacos. It's so, so good.
