I tend to make paprika roasted potatoes for Rosh Hashana and Passover. Easy to pop in the oven and reheat.

Any ideas for a potato and veggie side I could make ahead tomorrow for Wednesday dinner? Serving chicken soup, turkey breast, beef tenderloin instead of brisket, sweet noodle kugel. Thanks!
