You can make big batches of sweet potato fries that are healthy because you bake them. Slice them up by hand...the thinner, the better. Bake at 450 degrees and turn after 10-15 minutes and bake for another 10-15 and sample how they taste before you take them out. Lightly salt...grease cookie sheet with olive oil. Tastes great and I hate sweet potatoes.

I'd make Thai curry with sweet potatoes.

Sweet potato fries

Sweet potato hash for breakfast. Love them mashed with butter and a little brown sugar.

Roast them in a hot oven for at least an hour or hour-and-a-half, until sugar has come out, bubbled, and turned black. The inside will be soft and sweet, especially with butter.

Ruth's Chris sweet potato casserole. OMG. The recipe is all over Google. I hate sweet potatoes but could eat my weight in this casserole. Works better as dessert than a side IMO.

They were too appealing, even though I'm not a big sweet potato fan. Surely I'm not the only one who's made an impulse purchase at the farmer's market!

Any recipe suggestions??
