Yes, it would be fine. I'm fine with any meat, except sushi or shellfish, for 3 hours if it's an insulated lunchbox and the meat is cool when I put it in, but salami would be particularly safe since it's cured. If you are concerned, surround it with other cold foods such as fruit or yogurt, or even a juice box that you've frozen.

How long would salami sandwiches stay good in a lunch box without ice? I know salami is cured but modern salami -- will it be okay in a lunch box for three hours? TIA
