Cellulose prevents 'caking' and mold and keeps it fresh. But cellulose it is not human food and our digestive system is not prepared for it. Cellulose is for termites.

Oh, you must be kidding. Cellulose is a part of every plant, edible or not. It is the primary component of dietary fiber.

I love love the Cabot shredded cheese. The Harris Teeter Trader's shredded cheese is also good...they have some gourmet ones like gruyere. I don't like the Kraft, Sargento, or other brands because the anti-caking seems to make it also anti-melting, especially when you're putting it into a dish.

Op here-

Just FYI - cellulose is what makes up cell walls in plants, so if you eat lettuce, cellulose is most certainly human food. Courtesy of ninth grade biology...

But I wonder if that's the difference... My kids won't eat it at all - dd said it was gross, but couldn't tell me why exactly... Back to kraft.

+1

WF 365 doesn't use cellulose. That's probably why it smells different to you from cheeses that have additives.

Or, you could have just gotten a bad bag or your fridge is going bad (we didn't realize the fridge was going out until some of our dairy products went bad!).

I stopped buying preshredded cheese b/c kept finding small molding bits. I buy by the block and shred as needed.

I have never noticed that and I'm part bloodhound. I also don't stick my nose in the cheese, maybe I should start? Do you notice the smell just from opening the bag or do you really get in there to sniff? That cheese melts so much better than kraft.

Buy Kraft. This one of the times that the big corporate brand is just better. Heinz ketchup is another example.

smells funny.

i've gotten is very frequently and noted that it seems "off" very quickly - well before the use-by date.

last week, it smelled funny right when i opened the packet, so i wonder if that is just the baseline smell of the cheese

this was both a mozarrella and mexican packet

anyone else have this?
