Love the gazpacho idea.

Black bean, corn, and bell pepper (red or green or both) salad. With green onions.

Potato salad, with vegan mayonnaise. Earth Balance mayo with the green lid (olive oil based) is very good.

Cole slaw -- make your own dressing with the above mayo, apple cider vinegar, and honey.

Bottom line, there are a ton of salad and dip options out there that are easy.

For canapes or main dishes, sorry, it's too late and my memory's not calling them up easy right now.

Use an egg substitute for a binder. You can boil flax seed or buy something of the shelf. And obviously skip the sauce/garnishes.

I've thrown together a couple of good quinoa salads that were delicious and went over well at parties. I'm sorry I'm not much for recipes, but hopefully there's some inspiration. One was sort of Tex-Mex with bell peppers, mango, black beans, chopped and avocados. For the other one I used almonds, dried cherries, tons of arugilla, and parsley with a lemon and olive oil mixture stirred in.

Party hosting time (small group), and I need something fun to provide, but it must be vegan and gluten-free. I usually do a fruit salad, but would like to do something else this time around. Maybe something with quinoa and nuts? Completely open to suggestions, but it should be relatively easy and quick to prepare (must put together after work).
