One of my favorite summer dishes - cook and cool quinoa. Halve some cherry tomatoes, dice avocado, lightly roast corn (can use frozen if lazy). Toss together. Then toss with honey (or maple if vegan) lime dressing - 50/50 oil/lime juice with a big squeeze of honey or maple and a small squeeze of dijon mustard.

101cookbooks.com has fantastic recipes. Most are vegetarian, and the ones that aren't vegan usually have some suggestion for swapping out an ingredient to make them vegan. The photography is beautiful, and I have yet to make a recipe from there that hasn't been excellent. I also love Thug Kitchen.
