This is so funny -- it's a highbrow variation on a good Southern breakfast, grits and eggs and sausage.

Maybe 35 - 40 minutes? The polenta takes a while. I was cooking the whole time, but I also made lunches for tomorrow, and cut up a watermelon during the time it was cooking. It also took me a little longer to clean up because I had 3 pans (polenta, sausage/veggies, and eggs).

To me, it's a weekend night meal, when I have a little more time. Weeknights I like things that are more like 20 minutes and have 1 pan to wash.

If you don't like clicking links, it's polenta with cheese (I used chevre) topped with chicken sausage (I used andouille from Whole Foods), garlicky spinach and tomatoes, and a poached egg.
