8 breasts would probably be enough but I'd to 10 or 12 just because I'm always afraid I'm going to run out but people don't pile on a full breast worth of chicken when it's pulled. Good for leftovers though.

Cutlets or bone in? I usually do 4 lbs of Cutlets but for bone in, I make sure there are 4 chickens, 8 breasts and 8 pieces of dark meat. Depending on what else I am serving, I might get an additional package of thighs.

1/2 pound per adult, 1/4 pound per toddler, and 2 pounds for the guys who make big sandwiches. I'd order 9 pounds and if there is extra, that's fine.

How much pulled chicken for 12 people? 2 toddlers?
