Pancakes with rice flour and soy milk taste great.
Veggie wrap. Get wheat wraps from any grocery store. I use Costco. For stuffing, mix mashed potatoes, mashed beets. Saute in olive oil for 5-10 min along with dices red bell peppers. Add spices - cumin, garlic salt, red crushed pepper and salt. You can also add tomato ketchup to this.

Roasted tomatoes.

Obviously not for the entire meal, but I love roasted tomatoes. The Brits have them as a breakfast staple, and I always think we should learn from them on this.

Any type of roasted potato dish. Lots of vegan muffin recipes out there (check out Post Punk Kitchen). Also, you could easily do most bagels and get some Daiya cream cheese from Whole Foods. Possibilities are endless!
