The lemon "cooked" it - It's totally fine. This is what happens with an acidic marinade as pps said.

It's the same principle as preparing seafood in lime juice for ceviche. The acid in the citrus cooks the protein. Definitely safe to eat.

Should be. The acid "cooked" the outer layer. As long as its cooked through, should be fine.

Yes, it's ok. The acid does that and it's harmless.

We marinated chicken in a lemon-based marinade this morning and some of it turned white. We're cooking now but is it safe to eat despite being turned by the lemon prior to cooking? I wouldn't normally question it but I'm pregnant so figured I should ask.
