what kind of salsa? I read about crockpot chicken and salsa but I'm salsa stumped. DS doesn't like spicy so it needs to be mild but I really never buy salsa (we typically go out for mexican). Any best bets on the salsa front?

Tonight I made chicken that had been marinating in fresh salsa for about 8 hours. I was very skeptical about how it might turn out, but it was great! My children each ate two servings! It was done initially out of desperation, since we just got back from being out if town and our fridge was pretty bare. I will be making this again!

Any salad dressing works really. I have a few jars that I make in bulk and keep in the fridge. Italian, balsamic vinaigrette, a citrus vinaigrette. These all make great marinades.

I also make a teriyaki one with soy sauce, zest of an orange, grated fresh ginger, juice of the orange.

One of my favorite marinades is olive oil, lemon juice, minced fresh garlic and a little salt. I don't marinate too long in it, as the acid in the lemon starts to "cook" the chicken.

I find that chicken marinated too long in yogurt turns the meat into a strange consistency.

If I'm doing a whole chicken, I like to marinate it overnight in whole fat plain yogurt with meat masala (any mix will do) - I put it in a big ziplock and massage it in.

We do a lot of dry rubs on chicken for grilling or roasting. I am looking for ideas/recipes (not store-bought) for marinades. Ideally I would like to make the marinade the night before and throw the chicken in the marinade the night before or in the morning and then just throw on the grill the following night. Bonus points if I can make it in bulk and freeze the raw chicken in the marinade for later defrosting.
