I peel beets and cook in microwave. Not as tasty as roasted in foil, but easier.

Steam them, peel them and serve cold with feta crumbles. Our 4.5 year old can't get enough. And the bonus for us is she loves that they turn her poop red. Whatever gets her to eat beets is fine with me.

What size pieces? I picked up some GIGANTIC beets recently, and if I cubed (1"), cooked, and then peeled, I'd be peeling like 30 pieces from one single beet.

Lots of folks say this, and it's fine, but I find it easier to peel them first.

Wrapped in foil and roasted with olive oil and sea salt.
I like to serve them still warm with burrata, toasted hazelnuts and arugula.

The Joy of Cooking way--cut off the leaves leaving a little bit of stems, put in dish with 1/2 cup water and aluminum foil over, and bake for 1 hour 15 min (less if small beets) on 350F.
Thank you 8:40 for your idea of later use; I didn't know that. Now I'm imagining cooking them in the morning or right after I pick up the kids from school.

wash, wrap well in foil and roast in oven. Let cool or refridgerate for later use. The peel slides off when you're ready to cut and eat.

I just steam mine for about 20 minutes. Then turn the heat off and let them hang out for 15 more.

I love beets, but find them a pain in the ass to cook sometimes - and they take so long!
Am I missing something? What's the easiest, and least messy way to cook them?
