I'm a picky eater but no rice, pasta or red meat -- that is REALLY picky.

I second what the others posters have said -- chicken and 1-2 vegetable sides and bread. On behalf of those who are picky, I'd say the main thing is to cook everything simply -- avoid mixing stuff together and avoid sauces. I feel like adult picky eaters generally eat most major foods -- grilled or baked chicken, veggies, bread etc. -- but they tend to avoid many sauces or broths because they may not like sweet, salty, sour, whatever. As for picky eaters having mental problems -- probably some truth to that as I find all of the picky eaters I know (incl me) to be a bit Type A or control freak types of personalities and food is something that we can control.

I have become a master of feeding picky eaters because of a picky son and other weird eating needs in my family. How about something like chicken kebobs? Chunks of chicken done simply on the grill, plus grilled veggies. You can make a dipping sauce for those who like it. Add nice fresh bread. She can eat what she likes, leave what she doesn't, and it doesn't have to be a big deal. I've found that for picky eaters, the one pot meal (stew, soup, tart, risotto) is the kiss of death - they can't eat any of it, so they can't even look polite by, say, eating lots of chicken and saying how wonderful it is.

Ham & Spinach quiche (so easy to make with store bought crust), a make-your-own salad bar, baguette and cheese for the rest of the normal eaters.

I find adult picky eaters like this intolerable. Bless you for agreeing to feed her anyway.

My first thought was that she had an eating disorder and is using "pickyness" as an excuse not to eat.

This is not a joke. I eat everything so it's hard for me too to fully understand it. She's a nice girl so I have to make something that she will enjoy too.
