try a revearse sear instead i use iron on my egg all the time as well. after a slow 200 degree cook, toss on the skillet crank it up to about 700 toss with butter

broiler dries it out.

We do the reverse sear on the egg also, best steak ever.

I have a large and while it is fine for a family of four, it gets tight when we entertain and want to cook 10 racks of ribs or more than 15 lbs of butt

the PP has no idea what you are asking so ignore them and they have never had food cooke don one.

but i must warn you, it will change how you eat out.. you will never find a better steak than one cooked on a bge

get a thermapen as your #1 eggcessory.

No idea what this means. We have an XL BGE and I think it's is the perfect size for a family of four. Not much negotiating but some will offer some free eggcessories (nest, plate setter, ash tool, etc). Fort Hunt HW has a great room in the basement with all the different sizes available and they are very knowledgeable.
