Thanks, all. I decided to go with a rotisserie chicken last night (packed leftovers for lunch) and will probably just order pizza tonight. We'll eat fresh/healthy again next week when this move is behind us!
We have had meal type smoothies from Tropical Smoothie the past 2 nights. They have healthy options, and you can modify to make them even healthier. At 5 bucks each, it's way less expensive than a regular meal out.
I would get a rotisserie chicken from the deli and a loaf of good-quality bread and some yummy cheese. Have chicken with bread and cheese as a side dish for tonight and have a grilled chicken and cheese sandwiches tomorrow. Then, I would just get some fresh veggies or fruits to go with it. Only dishes required will be a frying pan for the second night and utensils.
Moving out of our house in 2 days, and our fridge is now empty. I'm stopping by the store tonight to buy ingredients for dinner tonight and tomorrow. Any ideas on what I should plan to make the next two nights? I'd like it to be light and healthy, not require unpacking too many pots/pans, and hopefully use up all the ingredients I buy between the two meals. Also, DH is not a fan of salads for dinner, since he always has them for lunch.
We've eaten out the last 2 days, trying to avoid re-stocking the fridge before the move, and I think we're all feeling very blah from the fat and sodium consumed. Plus, it's not exactly budget friendly.
