1) dry red kidney beans (serve over rice).

Simmer for about 2-3 hours (shorter if soaked overnight) in water, 1 can tomatoe paste, 1 fried onion, salt, oregano). Should be a bit soupy. Add water as necessary.

2) el salvodorean frijoles de seda. Buy these dry beans at giant or Latin market. Simmer in water for 2 hours with 4-5 crushed garlic cloves till tender. In a separate pan, fry 1 onion and your rice together a few minutes, then add the bean juice to cover and cook the rice. When done mix with beans and voila.

My husband who's a very BASIC cook came up with this concoction: three cans of beans (whatever we have, preferably a mix) mostly drained but not entirely, season salt, and garlic. Simmer. For some reason, it's flavorful and delicious.

We use the recipe on the Goya black beans can. But if you want to be healthy, halve or omit the Sazon seasoning, which has MSG and a lot of salt.

I don't think it's safe to cook red beans in the slow cooker. They need to hit a higher temp to neutralize some kind of toxin. I learned this the hard way.

Huh. Thanks for the link, I will check it out. Like the poster below, we are also a family of New Orleanians who have been making red beans in the crock pot for years and years.

I've been making them in the crockpot for years with no problems. My family loves them and it smells wonderful crockpotting all day.

My friend Betsy from New Orleans gave me this recipe:

1 package (16 Oz. Package) Dry Red Kidney Beans
1 whole Bell Pepper, Chopped
1 whole Onion, Chopped
3 stalks Celery, Chopped
2 teaspoons Salt
½ cups Dried Parsley
1 Tablespoon Sugar
¼ teaspoons Cayenne Pepper
2 teaspoons Garlic Powder
1 leaf Bay Leaf
1 teaspoon Cajun Seasoning
¼ cups Vegetable Oil
1 can (14 Oz. Can) Chicken Broth (optional)
1 can (12 Oz. Can) Beer (optional)
1 whole Ham Hock (optional)
1 package (16 Oz. Package) Sausage (andouille, Chorizo Or Cajun)

Soak beans in cool water overnight (making sure beans are covered with at least 3? of water). The next morning, drain beans and rinse well. Put all ingredients, except sausage, in the crock pot. Cover with water. Cook on high for 6-10 hours.

After 8 or so hours, stir the bean mixture well, mashing some of the beans (they should soft, but not extremely so – they will still hold their shape). This will make the beans nice and creamy. Add more liquid if necessary.

Chop sausage into little disks and saute on the stove over medium heat until nicely browned. Add the sausage (and flavorful grease) to the beans, stir until fully combined.

Serve over steamed rice, and be sure to have plenty of cornbread on the side.

OK, this is crazy simple but my kids love it. I make a pot of beans (usually black beans; they are simple to make in a pressure cooker -- doesn't take all day) and a pot of rice. I mix the rice, beans and some salsa together in each serving bowl. Sometimes we add cheese, sometimes not. My kids can't believe that they actually like this but they do.

We eat rice and beans at least once a week. Healthy and cheap and filling! Mostly we play with the way we serve it; the recipe usually stays the same:

Sautee onions and garlic in a little olive oil
Add chopped up sundried tomatoes
Add canned beans and tomatoes (about 1 can tomatoes to 3 cans beans)
Simmer for a few hours if you have the time
Season however you like; we like cumin and some italian seasoning.

I double it up each time and freeze half for the next week.

To serve, we rotate these:

1) Frito pie! Add into a small bag of fritos with toppings - chopped onions, lettuce, tomato, avocado, salsa, vegan sour cream (we stay vegan at home).

2) Over brown rice (with toppings)

3) Over elbow mac (with toppings)

4) Over vegan sausages (in a bun, with toppings)

5) Taco salads in a tortilla shell (with toppings)

6) Soft tacos (with toppings)

I find my kids will eat mostly anything if there are toppings.
