I only make bacon on the weekends, but am definitely trying this next Saturday! I hate how messy frying it is.

PP again. Oh, and the pieces don't shrivel up - they lay flat like at the restaurant when they put a weight over it, so it looks pretty on the plate.

I used to cook bacon in the oven...
but the BEST way is actually using a george foreman grill or a panini maker.

It cooks it PERFECTLY, quickly, and all the grease drains into a tray that you toss out in the trash.

Easy peasy cleanup!

I have a square cast iron pan that must be 50 years old and meets all of your requirements. You could check the Lodge website to see if they make one. Le Creuset also makes a square one, but I think it may be a grill pan and not be flat bottomed.

It would be nice if it has a pour spout to make pouring the grease out easier.

My current pan sucks and is really hard to clean after cooking bacon. I don't know what would be best - calphon, Teflon, cast iron, etc.
