I aim for 3. Sometimes I'll go with 2 if I have a pretty good idea of what something should cost and the bids come in around that.

If I have a recommendation from someone I trust I might only get one bid. If I don't I try to find 3-4 to call and often one flakes out.

Depends how big the project is. On painting we have a painter we like and we just go with it even if it costs a little more. On more involved projects like a bathroom reno we typically try for 3 bids.
