Can't you make pancakes, waffles (or even buy the frozen boxed ones -Eggs strawberry flavor is pretty good), or something similar? Jazz it up with whip cream and flavored syrups.
Do they sell Pillsbury crescents or biscuits? You can get super creative with those too.

Can you make a pasta dinner for Easter? Obviously, not remotely traditional, but if you can't get fresh ham or turkey then not sure what other choice you have.

Even if you have frozen meat, it won't defrost in time to make it for dinner or ready for a croc pot in time.

Hard boiled eggs should last for 1 week in the fridge if kept in the shell. So if you want to dye eggs with your kids before the trip I would plan on eating them up before you go. Otherwise dye them on Easter! Raw eggs will certainly keep that long.

As for the meal, I would definitely agree with the suggestions of ham and mashed potatoes. A fully cooked ham will last weeks after you buy it. All you do is reheat in the oven. Potatoes will keep if you store them in a dark cool place while you are away. Unopened milk and some butter is all you need for those. I would definitely go with frozen veggies of your choice, fresh will not last 9 days. You can get frozen rolls or a refrigerated crescent roll type.

Don't forget dessert! Buy something frozen, or bake something on Easter Sunday. Duncan Hines has a boxed carrot cake mix that you could whip up pretty quickly.

A ham will easily last 9 days, not to mention it's the easiest thing in the world to make. Make potatoes and a veg ( frozen asparagus?)

I've seen marinated legs of lamb at Chevy Chase Supermarket that I have roasted that have pretty long sell by dates, but not sure they are that long.

You can definitely freeze a ham, make some crock pot mac and cheese, and steamfresh some frozen green beans. Voila. Easter dinner.

What about making some freezer meals before you go? Sorry I'm not Christian so I don't know what the traditional meals are but is there anything that you could make and freeze? They when you get home just pop into the oven to bake?

We get back late (probably around 10 pm) and I don't think that anything will be open on Sunday (foreign service officer currently posted in very Catholic country).

I do have my Easter basket stuff. We will probably dye eggs Thursday night - I figure these can stay in the fridge for nine days (right?). Egg salad for me for lunch on Easter Sunday, but I don't think that the kids will go for it.

I'd eat out. I'm coming back on Friday so I should have time. Just make sure you have what you need for Easter baskets.

We will be leaving on our Spring Break trip on Friday and returning home on the Saturday night before Easter. Not sure why I hadn't thought of it before, but this means that I need to have all the food that we will eat on Easter Sunday in the house before we leave 9 days before. Any suggestions for breakfast/lunch/dinner with ingredients that won't go bad after nine days?
