I made that three years ago and never knew what I did wrong, because it was not good. It looked so fabulous!
Muffins wouldn't replace the quiche, but they're pretty easy to make with vegetable oil, and you could get any number of dairy-free spreads or jams. I might just be craving bran muffins right now...
