Potato kugel!
grated (or food processed) potatoes and onions, matza meal, eggs, salt, pepper, oil,
bake and eat!
My mom makes any vegetable into a kugel:
1-2 lbs broccoli, cauliflower, asparagus, squash.
In food processor with 3 eggs, 1/2 c may, 1/2 c creamer (soy milk), 1.5 T margarine, 1.5 T potato starch, 2T onion soup mix (not for winter squash).
Bake at 350 until done (I think 45 mins)
