I've had that happen before, but I think it was closer to 500 and my lungs have some problems.

No, not at 325. That is quite a low setting.
You can scald your lungs by inhaling superheated steam (like if a boiler burst), but a home oven should be safe. I routinely roast vegetables at 450-500.

Can one burn one's lungs taking something out of the oven (that was in the back)? Oven was at 325. My lungs feel weird now. I don't know if I breathed or not while reaching back there but it took awhile to properly grasp with the oven mitt.
