When my mother was on Coumadin, I would make veggie lasagna with cut up squash and mushrooms. It worked out really well.

You just need to avoid the veggies high in vitamin K, e.g. dark leafy greens:

I would make just a type of veggie lasagna that your neighbor can eat --ricotta & tomato, mushroom, pumpkin.

You can have steamed veggies on the side.

I would still make fish/salmon even if your kids dont like it - the adults will eat it.

I am hosting a dinner to thank my neighbors for helping with my kids, one neighbor cannot have brocolli, spinach, chick peas, etc. anything that interferes with coumadin / blood clotting. I am making vegetarian lasagna (which has both brocolli and spinach) and want an alternate main course dish to serve. My house is kosher, so I need something without meat. More pasta feels like overload. I can't think of what to substitute in the lasagna. My kids are not a fan of fish (except fish sticks). I'm drawing a blank as to what would be good. Ideas?
