Make yourself scrambled eggs with sauteed onions, bell pepper, mushrooms--anything that floats your boat. It's always good to boost your veggie count.

Egg white frittata muffins. You can google some recipes but here's what I do:

Heat oven to 400.
chop up whatever veggies I have in the fridge that would be nice in the muffin.
I use these a lot:
broccoli
asparagus
mushrooms
onions (some recipes say you need to pre-cook; I prefer uncooked.

shredded cheddar if you want. My kids won't eat the muffins w/o cheese, but I skip it for myself.

some spices that match up well with whatever veggies/cheese you're using
chopped cilantro or parsley
paprika
cayenne

Spray muffin tin with oil
put in veggies/cheese/spices
pour in egg whites

I use full size muffins, not the minis.
cook for 20 minutes @400 (less time if you're doing minis)

I love egg sandwiches for breakfast but am trying to reduce (a la Betty Draper). Any ideas for using these? I hate the lack of texture and flavor.
