Risotto (mushroom, or squash work well)
Potato, leek, and bean casserole
Various Indian dishes (dal, channa masala, begin bartha, aloo gobhi, etc)
Pad Thai with tofu (lots of other Thai dishes too of course, but pad Thai is my favorite)

- only i replace the Sirachi sauce with a soy/worchestershire mix, leave out mushrooms, and I pan sear and chop up the tofu with the spatula. it tastes just like manwich!

Just a few of the vegetarian recipes from the 'Fat Chance cookbook' I'm reading now. There must be versions of these recipes floating around.

Lentil meatloaf with a ketchup BBQ sauce.

I also agree that stuffed portabellos on the grill are delicious.

I want to eat less meat but most of the vegetarian dishes I find just replace meat with pasta. Not a huge pasta person.

Any favorite vegetarian dishes you could share? TIA.
