I'd look at Isa Chandra Moscowitz's books (Veganomicon, Vegan Cupcakes Take over the World), etc.

Also, the Oh She Glows blog is vegan and tends towards healthy eating.

DD is allergic to a a lot of stuff so something that is vegan and does not have horrible amounts of sugar. I am not much of a baker.
