I lived in Spain for a year and the first thing I thought of when I read the title of this post was Spanish tortilla. It's a mainstay of the Spanish diet and is sooo delicious when prepared well. And, it's totally vegetarian.

I use a Spanish friend's recipe and don't have it handy. If you Google Tortilla Espanola, look for a recipe that uses Yukon Gold potatoes, onions, eggs, salt, and olive oil. There shouldn't be anything else in it. The potatoes and onions are sauteed in olive oil. And, you want to slice them thinly - ideally use a mandoline. You then add in the eggs and bake it in the oven. You want to use a saute pan, as the shape of that pan is traditional to the shape of the tortilla. It's so delicious and makes me want some now!!

Because in Spain, tortilla espanola has nothing to do with a flat flour or corn burrito wrap. Tortilla espanola
Is a classic Spanish dish made from eggs , potatoes and onions.

Why do you think OP is referring to a tortilla? Wouldn't OP have just said that? The dish I think of as being called Spanish eggs is potatoes, peppers, and chorizo in a hot skillet with a fried egg. It tastes fine without the chorizo, though Trader Joes makes a good veggie chorizo.

the standard spanish tortilla IS vegetarian. olive oil, sliced onions, eggs and sliced potatoes fried heavily and pan flipped.

did you mean something other than the tortilla?
