Socca is really good, and might make a nice starter. We actually have it in place of naan or pita sometimes. It's great with soups or something like hummus or baba ghanoush.

Also, this is gorgeous: http://www.theppk.com/2010/07/eggplant-potato-moussaka-with-pine-nut-cream/. You'd just have to sub in GF breadcrumbs (or an equivalent--ground almonds might work?). It's fancy-ish and always a big hit at out house.

Socca (Google for the recipe). Easy to make, fairly unusual, so has that specialness to it. Serve with something like ratattouile.

For an appetizer, a salad with fresh raw beets, grapefruit and fennel. Dress in good olive oil.

Dessert; dairy free sorbet with berries. Or macaroons. Turkish delight.

Optional GF/DF diet or celiac? Makes a difference in just how careful you need to be on hunting out the gluten.

As for meal suggestions, maybe something Indian based. If not celiac you could have naan for other guests. There are also lots of GF recipe blogs, so that might be another good option. And if you go pasta based, I really recommend the quinoa pasta. But for any GF pasta cook it on a softer boil than you use for regular pasta - in my experience it's more fragile. Also be sure to stir it, esp spaghetti/linguini,as it is more prone to clumping.

Sautée onions and peppers and garlic. Add 2 cans (rinsed) of garbanzos or 4 cups cooked. Add 1.5 cups unsweetened coconut milk, 1/4 c tomato paste, some salt, pepper, turmeric, and cumin. Serve over brown or white rice.

teriyaki veggies with rice? like snow peas, carrots, mushrooms, peppers, scallions, garlic…. rice in a rice cooker. Saute the veggies in this.

You have to watch some of the secondary ingredients in sauces but GF pastas are so much better than they used to be. We use the organic brown rice pastas from Trader Joes all the time - even my grumpy old Italian dad likes it. So if you have a pasta course, use that.
