I cook a LOT and entertain a lot. Large groups of people too. I could become a caterer if I wanted. 
I use every burner I have (4), my oven, my microwave, crockpots, outdoors grill and my patio bayou burner - year long.
DH asked me if I needed a kitchen remodel and I declined. I have a sunny and bright kitchen and medium expensive tools and appliances. I think it is more important that I am comfortable in my kitchen and that I am actually doing the cooking - making hearty meals and trying out new recipes and entertaining, instead of having a high-end kitchen and fixing just a meager sandwich for my family and not entertaining. What is the point?

KA mixer - heavy duty kind with the bowl that moves up and down. It was DH's before we met 15 years ago, and it acts like it is brand new. We use it a few times a month. It is fantastic.
Don't know if this counts, but we recently replaced our 1970's oven with a nice new high-end convection oven & gas range top. Most $$$ I've spent on any single item, use it every day, LOVE IT.

1) Vitamix: worth it
2) Le Creuset cookware: several, love them to pieces, bought many years ago. I don't know if I'd pay today's prices
3) Rancilio Silvia espresso maker
4) Henckels Pro S knife set: bought 12 years ago, one of the best purchases
IMO, these things are well worth it if they give you pleasure. You can buy cheaper versions of almost everything.

Cuisnart Food Processor
All of those are used constantly and are much loved. We hope all are long term, if not lifetime, purchases. Good knives really are amazing!!!!

All-Clad set. 15 years old and going strong.
KA Mixer, tilt-head model. Also about 15 years old and had the motor replaced and it's as good as new.
Wustof 8" chefs knife for my husband and Global 6" chefs knife for me.
Love Le Creuset, picked ours up at an estate sale. Don't think I'd pay full price for it.
