I use the America's Test Kitchen recipe (which you can find online if you google).

Crust: mix 14 oz graham cracker crumbs with 5 oz of melted butter. Press in to form in a 9 or 10 inches springform pan.

2 1/2 pounds of cream cheese at room temperature(rt)
12 oz granulated sugar
2 oz cornstarch
Finely grated zest of a lemon
Juice of lemon
2 teaspoons of vanilla
5 eggs (rt)
2 egg yolks
5 oz sour cream
Mix cream cheese and granulated sugar at low speed until smooth. Mix in cornstarch, lemon zest, juice of lemon, and vanilla. Mix till smooth scraping down the sides and bottem of the bowl a few times. Add eggs and yolks one at a time, blending thoroughly after each addition. Mix in sour cream.

Pour in prepared pan.
Cook at 330-340 for about 35-40 minutes, maybe long depending on your oven. Cool slowly and leaves in pan till total cool. If you cool it too fast it cracks.

You can leave out the lemon if you are going to add your own favors.

sad to say I can't find my old recipe and can't ask a relative. anyone have a link or recipe? I'd like to do a twist and add mini chocolate chips (canoli style).
